I've raved about the uber-popular No-Knead Bread, popularized by the New York Times. You used to have to start it the night before you wanted to bake.

Cook's Illustrated also had a faster version (but not what I would call "speedy") a couple of months ago. It used some vinegar and beer to...well, it was something about chemical reactions and bubbles and all that.
I'm excited about whole-grain no-knead bread!
Thank you!

Hmm, interesting. I am pretty in love with my bread machine, but I understand that these recipes turn out like "real" bread. I know bread machine bread is a little off, but it makes me happy.
